Title: Lighter Bake Oatmeal Raisin Cookies

1/2cBrown sugar, packed
1/4cSugar
1/3cLighter Bake or Prune Puree
1lgEgg
1tsVanilla
3/4cAll Purpose Flour
1/2tsBaking Soda
1/2tsCinnamon
1/4tsBaking Powder
1/4tsSalt
1 1/2cQuick Cooking Oats
3/4cRaisins
PRUNE PUREE
6ozPrunes, pitted (one cup)
6tbHot water...

Preheat oven to 375 degrees F. Coat baking sheets with non-stick spray; set aside. In mixing bowl, beat together sugars, Lighter Bake or prune puree, egg and vanilla. In another bowl, combine, flour, baking soda, cinnamon, baking powder and salt; stir into first mixture. Stir in oats and raisins. Drop by rounded spoonfuls onto prepared cookie sheets. Bake 8 to 9 minutes or until edges begin to brown. Cool on racks Directions for Prune Puree. In a food processor, combine 6 ounces (one cup), of pitted prunes with 6 tablespoons of HOT water; process until smooth. Makes one cup. Substitute for butter in cookies or cake.. use 1/2 cup of prune puree to replace 1 cup of butter.. Nutrient per cookie: Cal 85 (5% calories from fat); Prot 1.5g; Carb 18g.
